it's not so clear to me

I saw that too. But the examples that are used for counterstamp no longer say counterstamp.  The guideline text just hasn't been updated.

which is the right definition?

I found this issue some months ago. According Numista they are similar. A countermark is made by hand and a counterstamp is made by machine.

what about creating a specific field to record the information with a link to the original coin?

I like this, and the new field could be used in other derivatives objects, not only countermarked and counterstamped, but also replicas, imitations and contemporary counterfeits. There is a similar suggestion: https://en.numista.com/forum/topic129036.html
