Why don't the coins that belong to the sets appear in the monetary value of the collection?

Because there is no Numista generated Value for sets like there is for individual coins so the only Value for the set that enters into your “My values” number is the Buying value you enter when adding your set.

With regards to sets it would be nice to have three different values/prices.

 

1 - Issue Price. (If known - Referee to insert this when page created/validated)

2 - Purchase Price (That you paid for it)

3 - Current Value (Your estimate of what it is worth now)

 

For instance this set >>> https://en.numista.com/catalogue/set.php?id=1288

 

Would be…

1 - AU$35

2 - AU$50

3 - AU$350

Value 1 could/should be put in the description of a set, value 2 can be entered by the people adding a set to their collection in the buying value field, value 3 should be like for other catalog items be calculated by value 2s and resolved auction records (and of course be depicted on the page in some way).

 

 

But the very first thing should be finally the publishing of set guidelines so the Wild West of set adding is over and everyone can know how a set page is supposed to look like (what information is to be listed etc.).

In my opinion, it would be simpler if the value of each coin in the set were simply added to the total value of the collection.
